Ingredients

3 lb whole apricots, sliced (~8 c.)

1 1/2 lb sugar

Directions

Rinse and slice apricots. Make sure to slice the apricots lengthwise - they break down faster.

Cook apricots with sugar (and optional lemon juice, and other other optional ingredients) for ~45 minutes and test for gel.

Make sure to slice the apricots lengthwise - they break down faster.

Additions: ~ 1T fresh ginger per lb of whole fruit - good results, though be sure to put the ginger in early, to cook out some of the zippiness that can taste like carbination.

1/2 vanilla bean for 1 1/2 lb whole fruit - very sweet and rich, preferred ginger.

3 lbs whole fruit = ~ 2.5 lbs cut fruit
